The dedicated vignerons at Seppeltsfield are very fond of a few choice parcels which grow an intensely flavoured Moscato. This is the vineyard block they call upon to fashion a very favourite drink, the elixir that revitalizes and refreshes at the end of a hard day's work. Fully ripe grapes, bursting with a concentration of juicy flavours are vinified to retain a toothsome natural sweetness. The sybarites of Seppeltsfield are people of passion, they are partisans of the rich moreish styles and indulge in the making of a Moscato that they themselves enjoy.

It was Karl Seppelt who established the greater Henty region to viticulture in 1964. Burgundian varietals perform brilliantly under the cool ripening, maritime influenced climes, all white grapes excel. Originally chosen on the virtues of a growing season and terroir which favoured the production of cool climate sparkling wines, to rival the nation's best, Seppelt's Drumborg Vineyard has delivered vintages of the most remarkable Chardonnay. Textural, complex and rich, the Chardonnay of choice to accompany white pudding, milk veal or suckling pork.

Seppelt planted its Drumborg site in 1964 to grow premium quality, cool climate fruit. A vineyard that experiences challenging weather conditions, Drumborg does not deliver every year, but when it does, the results are outstanding. A generous and refined Riesling, exhibiting purity of style, a lean, elegant structure and outstanding length. The bright lime and grapefruit flavours combine with a mineral acid backbone to create a wine of great elegance that is irresistible upon release, destined to add depths of flavour as it evolves.

Mount Bellarine, on which Scotchmans Hill is located, is an extinct volcano where thick, black, moisture retentive and fertile volcanic soils of black clay with basalt subsoil lend individual and intense flavours to the wines. Chardonnay grapes grown here exhibit penetrating characters of stonefruit and melon with firm acid structures and crisp textures. Scotchmans Hill also retain vineyards in the King Valley where the cooler climes produce a softer, rich style of Chardonnay with vivid expressions of yellow peach, melons and aromatic tropical fruits.

Alma was the Schild matriarch, married to estate founder Ben Schild, she raised a family of eight children under primitive conditions while supporting her husband throughout the establishment of Schild vineyards. The original homestead at Three Springs was acquired by Ben in 1952 as a mixed farm with dairy sheep, stonefruit orchard and a small acreage of vines. Alma showed the greatest perseverance whilst encouraging her husband and nurturing a large family during some of the most impoverished times in Australian history.

From the sandy loam soils of upper Hunter Valley, picked just a bit earlier in the vintage for an easier drinking Chardonnay, treated to a course of oak barrel ferments, monthly lees stirring and a year's maturation. It took plenty of vision, love and attention, with a fair bit of bulldozing and persistence to make the Scarborough Gillards Road vineyard into the special patch of dirt it is today. A style that's evocative of new world Chablis, the perfect seesaw of citrus, almond, pear and mineral flint, spiced peach and deliciously creamy mouthfeel.
